Vegan Greek Salad
Sunday, June 29th, 2008As a strict vegan, who is allergic to garlic, does not like rice or pasta, I am often limited to steamed vegetable when I dine out due to the lack of imagination from some chefs. One of my favorite dishes is a Greek salad, hold the fetta and oil, then add roasted vegetables on top with mango and apricot chutney. Hope you enjoy this recipe, it is one of my favourites, it is filling and delicious, I often get many enquiries and comments as it looks fantastic and colourful. Cheers.
